Honey  Cornbread Recipe

One of my favorite meals is chili and cornbread.  Not because I'm a huge fan of chili, but my cornbread recipe is pretty epic.  Over the years I kept looking up recipes and each one had something I liked, but just wasn't perfect.  One day I came up with the genius idea of making my own recipe!!  Taking the things I liked best from other recipes and tweaking them to make it my own.  After many trail and errors I finally got it right.  Thus my Honey Cornbread recipe was born!

What you need
1 cup all-purpose flour
1 3/4 cups cornmeal
1 tbs baking powder
1/4 teaspoon salt 
1 1/4 cup of milk (I use whole)
2 eggs (large or xlarge work best)
half a stick of unsalted butter melted (if you only have the salted kind go ahead and use it, but skip adding the 1/4 teaspoon of salt then)
1/4 cup + 1 tablespoon of honey
1 1/4 cup of cheddar cheese (I have also used Mexican cheese in the past when I didn't have cheddar on hand.  It taste just as good)


Directions:
*Preheat the oven to 400 F
*Butter a 9 inch square pan (if you use a bigger pan your cornbread is going  to be a little dry)
*In a large bowl mix the flour, cornmeal, baking powder and salt
*In a 2nd bowl mix the milk, eggs, melted butter and honey.
*Now combine the two together.  Don't over mix, just make sure they are combined.
*Next you want to add your cheese.  I add mine slowly to make sure it is evenly spread out in my batter.  I always do this part by hand.
*Put into your buttered pan and cook for 25.  Use a toothpick to make sure it is done in the center.
*Last but not least, cut into squares and enjoy!!
