Health-ish Sheet pancakes

 I found out right before the holidays that my cholesterol levels are kind of scary.  Worse yet, I had no clue how to get the levels lower.  After several talks with my doctor and several hours of computer research I think I may have a bit of grip on the situation.  Not perfect, but I'm getting there.  As I tweak some of my recipes, I thought I would share them with you.

Up First is my Health-ish Sheet Pancakes


(Yes, those weird cuts are so where my hubby couldn't wait for me to get a knife and he started to pull pieces off)

Ingredients:

2 1/4 cups of 1% milk

4 tablespoons of liquid egg white

1 tablespoon of vanilla extract

1 1/2 cups of wheat flour

2 tablespoons of baking powder

1/4 cup granulated no calorie sweetener



8 tablespoons of melted margarine

1 cup dark chocolate chips

1 cup blue berries (use more if you wish)


Directions:

1) Preheat oven to 425 f

2) In a blender combine the milk, eggs, vanilla.  Mix it up.  Leave all of that in and add the flour, baking powder, sugar and half of the margarine.

3) Spread half of the remaining margarine on a sheet pan.  The taller the sides the better.  After you get the margarine spread pour the batter into the sheet.

4) Now add the blue berries and chocolate chips.  How you place them is up to you.  My favorite way is half one side half on the other.

5) Bake for 20 minutes

6) Remove and brush the remaining margarine on the top.


Now all you have to do is cut and serve.  Oh and don't forget to add your favorite Maple Syrup!  Mine is Maple from Canada!

You are going to have a lot of egg white left over.  So, as an added extra here is a super easy super yummy Scrambled Egg white recipe



Ingredients:

4 tablespoons of liquid egg white

1 tablespoon of 1% milk

1/2 low fat mozzarella cheese

1/2tablespoon fresh chopped spinach 

Directions:

1) Whisk the egg white and milk.

2) Place in a hot pan and let cook until done, scrambling as it cooks

3) Add the mozzarella and spinach

4) Quickly scramble it all together and serve.
